There was a time when anti-aging drugs were sought only in complex molecules, peptides, and sophisticated genetic engineering methods. But often, development began with mold on rice (statins, rapamycin) or research on eating certain vegetables. This week, a new study points to another candidate in this category: A compound in garlic that you probably kill every time you cook it.
The Story of DAS
Garlic contains hundreds of compounds, but researchers identified one specific one as key: Diallyl Sulfide (DAS). It is not found in whole garlic - it is created when garlic cells are broken. When you cut garlic, an enzyme called alliinase meets the compound alliin, and together they create DAS and its relatives (DADS, DATS).
This is the same process that creates the pungent smell of chopped garlic - a smell that almost disappears with long cooking.
What Does DAS Do to Muscles?
The team examined old mice (24 months, equivalent to 70-year-old humans):
- Experimental group: Received DAS with food for 12 weeks.
- Control group: Received identical diet without DAS.
The results:
- 15% less muscle mass loss during the study period.
- 25% improvement in grip strength (the gold standard for sarcopenia).
- Significant improvement in mitochondrial function in muscle cells - more available energy.
- Decrease in markers of systemic inflammation (CRP, IL-6).
- Fewer senescent cells in muscle tissue.
How Does It Work? The Biological Pathway
DAS activates a pathway called AMPK (AMP-Activated Protein Kinase) - the same pathway that metformin activates. AMPK is the cell's "energy sensor":
- When activated, the cell conserves energy, cleans damaged components (autophagy), improves mitochondrial function.
- It is also a pathway activated by caloric restriction and physical activity.
- Chronic activation of AMPK is linked to longevity in all experimental models tested.
In other words: DAS acts on the same pathway already known to have anti-aging effects. Its difference: it is accessible to everyone, for a few cents per garlic head.
How to Eat Garlic Properly
This is the critical point. Most people destroy the DAS without knowing:
Mistake 1: Cooking whole garlic
If you fry whole garlic cloves, the enzyme alliinase is not activated - almost no DAS. The smell is mild, and so is the benefit.
Mistake 2: Cooking chopped garlic immediately
If you chop garlic and throw it into a hot pan immediately - the enzyme is destroyed by heat before it had time to work. Again, no DAS.
The Right Method: Cut, Wait, Cook
Step 1: Cut, crush, or press the garlic using a garlic press or knife.
Step 2: Leave it to stand for at least 10 minutes at room temperature. During this time, the enzyme creates the DAS.
Step 3: Then (and only then) add to cooking. Cooking will not destroy the DAS that has already formed.
Alternative method: Eat fresh garlic in a dip (hummus, chimichurri, vinaigrette). No cooking at all.
Recommended Amount
Based on the mouse study and conversion to humans:
- 2-3 fresh garlic cloves per day = ~5-7 grams.
- If that's a lot: even one clove per day provides a significant effect.
- Can be divided into two meals (half a clove each).
Garlic Supplements: Yes or No?
There are many garlic supplements on the market: garlic pills, dried garlic powder, "aged" garlic extract. What is their status?
- Dried garlic powder: Loses most of the DAS during production. If the label says "high in DAS," it's worth checking.
- Aged garlic: Undergoes a months-long process. Its composition is different - it contains other beneficial compounds (S-allyl cysteine), but less DAS.
- Garlic oil: Can contain DAS, but in varying amounts.
Recommendation: Fresh garlic is always better. A supplement can be a backup for days when there is no garlic at home.
Caution
Garlic in high amounts is not without side effects:
- Blood thinner - if you take Coumadin/aspirin, consult a doctor.
- Gastrointestinal irritation - in some people.
- Odor - but that's the sign you're doing it right :)
- Interaction with HIV medications - important to know if relevant.
The Bottom Line
In a world full of expensive supplements promising to make you 30 again, there is something refreshing about a compound in garlic that your mother used, your grandmother used, and the entire Mediterranean has used for thousands of years - proving itself in research. You just need to know how to prepare it: cut, wait 10 minutes, cook. That's it.
This is not a sole solution for sarcopenia - a high-protein diet, resistance training, and vitamin D are still the core (see our article on sarcopenia). But DAS is a small, simple, and scientifically-backed addition that will cost you almost nothing.
